Bistec Encebollao

This recipe was inspired by a restaurant at home called Sol Food and their Bistec Sandwich.  (Can you tell I had a craving?)
Ingredients
Thin cuts of steak
1 white onion
Avocado
Swiss Cheese
Mayo
Sriracha
Bread (I used Italian)
Garlic
Salt
Pepper
Vinegar
Veg. oil
Adobo seasoning
Oregano
Olive oil
Prepping the Filling:
Season your beef with the salt, pepper, Adobo seasoning, oregano, and olive oil and let sit for about 20 min.
Slice up your onion in any way you prefer.  At this time also slice up your bread and put it on a cookie tray to toast.
Heat up a large pan (that has a lid) and add some veg. oil.
Add in your beef and let cook until brown.
Add in you sliced onions and a slash of vinegar to taste and cover you pan.  (You can reduce the heat a bit so the beef doesn’t get tough.
Let cook for about 20 min, or until the onions have cooked down a bit.
In a small bowl make a spicy mayo by combining the mayo and sriracha.
Slice up your avocados and stick you bread in the oven until toasted at a heat of 375 degrees.
Assembling the Sandwiches:
When the bread looks nice and toasted, place the Swiss cheese on the bread to melt.
Time to make the sandwiches!
Take your toasty bread and spread some of the spicy mayo on it, then place a slice of beef and pile it with onion slices.
Then top it off with some avocado slices and put the Swiss cheese bread on top.
