Since this year I did not partake in any sort of Super Bowl activity or party – it was after sorority recruitment and I was completely exhausted- I decided to make wings the other night. Although I am not the biggest football fan it doesn’t mean I dislike the food that is associated with the Super Bowl!
This was actually the first time I made wings on my own and I must say… they turned out pretty bomb. Some of my friends actually said they were some of the best wings they had ever had. I decided to use the boil and bake method for moist chicken and crispy skin!
Chicken wings and drumsticks (if preferred)
1/2 cup Sweet Baby Ray’s BBQ sauce
1/3 cup honey
1/4 cup Maple syrup
3 tbsp Mustard (both Dijon and yellow)
1/2 tsp garlic powder
1/4 tsp Cayenne pepper
“Slap Ya Mama” seasoning
Chives (for garnish)
Cut up your chicken wings- separating the wing tip from the wing and the wing from the drumette.
Cut at the highest points of the joints so that it cuts fluidly.
If your knife doesn’t easily make the cut, you are cutting in the wrong spot.
Put all of your chicken pieces into a big pot and fill with water.
Bring the water to a boil and then simmer for 10-15 min to cook the chicken.
Completely drain and dry the chicken and place on a big plate or container. (Make sure there is no moisture left on the chicken or else they will be soggy!)
Put the chicken in the fridge for a few hours (the longer the better) so that the skin dries out.
Once the chicken is dried out, dry rub the wings and drumettes in the Slap Ya Mama seasoning.
Preheat your oven to 400 degrees F and bake your wings for around 45-50 min or until crispy!
Whilst your wings are cooking, make the sauce.
Mix together in a bowl: 1/3 cup of honey, 1/4 cup of maple syrup, 3 tbsp of mustard (I did this part sort of to taste and I also did a combo of yellow and dijon), around 1/2 tsp of garlic powder, around 1/4 tsp of cayenne pepper (I think I ended up adding more because I wanted it on the spicier side), and lastly, add the Sweet Baby Ray’s to taste (around 1.5 cups)
Coat the Wings
When your wings are done and crispy, toss them in the sauce- or if you want you can individually brush them with a basting brush.
Place on your serving plate and garnish with some chopped chives!! (And obviously serve with ranch, too!)
PS. this wings ended up packing a bit of a punch!
