Pork Rib Sandwich

I decided to take a risk at the grocery store and buy a cut of meat that I had never prepared before… to be fair.. I only decided to get it because 1. I was in the mood for pork and 2. it was pretty dang cheap.
Anyways I decided to do a dry rub prep and it actually turned out rather delicious!  Then, I was too lazy to prepare some sides for my meat dish, so I made a sandwich and it was RIDICULOUS!
This is the type/cut of boneless pork rib I used^

Ingredients for the dry rub:
Kosher salt
Fresh ground pepper (accidentally not pictured)
Tony’s Creole Seasoning
Olive Oil
Brown sugar

1. Cover a glass cooking sheet with some tin foil.
2. Dry rub your pork with the salt, pepper, Tony’s and brown sugar.  Make sure you get both sides!
3. Drizzle in oil!
4. Cook for about 1.5 hours on 400 degrees or until completely cooked through.  (Cooking times WILL vary depending on how large your cut of meat is!)

5. Let rest for about 10-15 minutes and then slice into strips



Now time for the sandwich:
What you need: (besides the delicious pork you just made)
Brioche bun
Some sort of slaw/ sauerkraut (I used beet sauerkraut)
