Raw Zucchini Salad

A couple nights ago I was craving one of my favorite appetizers from one of my favorite Italian restaurants in Marin County, Cucina, so I decided to use my memory and recreate the dish!

What you need:
2 zucchinis, shredded
Either slivered almonds or almond slices (I found almond slices)
1 cup Pecorino Romano cheese, shredded
Salt & Pepper
3 tablespoons of lemon juice
1/4 cup of olive oil
1. In a large bowl shred your zucchini and cheese.  Mix around until well blended.
2.  Add in your almonds.
3.  Toss with the lemon juice and olive oil, and finally, salt and pepper to taste.
This is a great side dish to any meal (specifically a hearty Italian meal) because It brings brightness and freshness to the table.  Plus it is beyond easy!
If you are planning on eating it later or taking it for lunch the next day, keep the oil and lemon juice on the side or else it will get soggy.
