While there is no alcohol in this dish, it is theorized that someone came home drunk, looked at what they had in this dish, and voila! Drunken Noodles were created. I also think that there is no better solution for drunk food or a hangover than warm, spicy and carbo-loaded foods.
1 package of wide rice noodles
1 small yellow onion, sliced
1 shallot, finely minced
2 garlic cloves, finely minced
2 medium sized Roma tomatoes, cut in slices
3 Thai chilis, sliced
2 tbsp oyster sauce
2 tbsp fish sauce
2 tbsp soy sauce
2 tbsp brown sugar
Get some water boiling, cook your noodles for about 4-5 minutes.
Drain, run with cold water &set aside.
In a hot pan or wok, heat up veg oil & add your shallot and garlic.
Cook until fragrant.
Add in the tomatoes, onions &the rest of the components (except the noodles and Thai basil).
Cook until the sauce starts to boil and the tomatoes start to wilt.
Add you noodles and combine well.
Add your Thai Basil, mix and serve.
