Kale, Chicken & Halloumi Salad

Ingredients
1/2 cup cooked, shredded chicken
1 cup kale; massaged until soft & roughly chopped
3 slices of Halloumi cheese
1/3 cup cucumber; chopped
1/3 cup tomatoes; chopped
1/2 cup cooked quinoa
1/3 cup broccoli
1/3 cup fingerling potatoes; diced
2 tbsp parsley; chopped
2 tbsp mint; chopped
2 tbsp olive oil

Dressing
4 tbsp tahini
2 tbsp olive oil
1 tsp salt
1 tsp lemon pepper
1 tsp maple syrup
1/2 cup water

Mix all dressing ingredients together.
If the tahini is bitter add more water & salt.

Bake
Preheat oven of 375F.
On a large baking sheet, place you potatoes and broccoli.
Drizzle with olive oil & toss.
Remove broccoli after 15 minutes or when tender.
Remove potatoes after about 35 minutes or until crispy.
Let cool completely.

Halloumi
In a hot pan, pan sear the halloumi cheese until crispy on both sides.
Let cool.

Assemble
In the bottom of your bowl start with quinoa, potatoes & broccoli.
Then the kale, veggies, herbs, chicken and halloumi.
Top with dressing & bring to work or toss!
