Spicy Veggie Ramen

Ingredients
2 cups veggie stock
1/3 yellow onion; diced
1 large spring onion; sliced
1 small portobello mushroom; cubed
1/3 cup corn; canned or frozen
1 egg
1 packet of ramen noodles; just the noodles!
1/2 tsp chili oil or paste
Small pinch of sprouts

Broth
In a small pot, cook off your onions until they are translucent.
When fully cooked, add your veggie stock, spring onions & noodles.
After the noodles have been cooking for about 3 minutes, add your chili paste or oil.
Then add the other veggies; portobello mushrooms and corn.

Egg
In a small bowl, crack your egg & scramble.
When your broth is starting to bubble, pour your scramble egg into different parts of the pot.

Assemble
When your egg drop is fully cooked- you will know when the yellow/white fluffs up to the top, pour it all in a bowl.
Top with sprouts or extra spicy things if you like!
