2 can chickpeas; drained
1 tbsp vegetable oil
1 small sweet potato; peeled and diced
1 can coconut milk
1 tbsp turmeric
1 tbsp brown sugar
1/2 cup water or vegetable broth
1 tsp salt
3 large tbsp yellow curry paste
1 small yellow onion; diced
Rice/brown rice/ quinoa
In a pot, heat up your vegetable oil.
Add your onions & cook until translucent.
Once your onions are cooked, add the curry paste and a big spoonful of the coconut milk.
Add your turmeric & mix well again.
Next add in your chickpeas & sweet potato and coat with the curry sauce.
Add in the rest of your coconut milk & water & mix well.
Stir in the brown sugar, salt & adjust seasonings to taste.
Bring the curry to a boil.
Once boiling, drop the heat to a simmer.
Cover & let cook for about 30 minutes.
Serve over rice or quinoa and top with herbs or chopped nuts!
