Kimchi Ramen

One of my favorite things ever is instant Ramen.  I love tasting new flavors and making the cheap packets of noodle soup my own by jazzing it up with extra ingredients.  You can literally put anything in your ramen and you have a restaurant quality bowl of soup.

1 package of kimchi flavored ramen
1/2 cup spinach
2 scallions; thinly sliced
4 dried shitaake mushrooms; sliced in half
3 cups water
2 eggs
1/3 cup premade kimchi
Sesame seeds for garnish

In a small pot, boil 3 cups of water.
Drop in your mushrooms, as they will need to soften and will take the longest to cook.
After a few minutes, add your noodles & packets of seasoning.
In a small bowl, scramble your eggs & drop them in different parts of the pot.
Once you add the eggs, do not stir until the eggs rise to the top.
Add half of your sliced scallions & spinach.
Once the noodles & eggs are cooked & the spinach is wilted, add in the kimchi.

Pour the soup into a bowl.
Top with the other half of the scallions & the sesame seeds.
Eat while hot.
