Pecan Pie

Happy (almost) Thanksgiving!  Since Thanksgiving and the holidays are approaching, I wanted to share one of my favorite family Thanksgiving recipes.  Up first, Galia’s Pecan Pie!

1 stick of unsalted butter; melted
1 cup white sugar
4 eggs
2 tsp vanilla extract
1 cup corn syrup
1 cup pecans
1/2 cup chocolate chips
2 shallow 9″ frozen pie crusts
More pecans for the top

*makes two pies*

In a large bowl, mix together all your ingredients (except the pie crusts & extra pecans.
Mix well!

With a fork, poke the bottoms of your pie crusts.
This make sure there will be no air bubbles in the crust.
Poor the filling into the two pie crusts, making sure the ingredients are evenly distributed.
Flatten out the top with a spoon & then add the extra pecan on top to fill any gaps & just make it look pretty.

Preheat your oven to 350F.
Bake for 50 minutes.
Let rest about 10-15 minutes before serving, if serving warm.
NOTE: I like this pie better frozen, it is like a Thanksgiving Snickers bar!  Let your pies cool, cover with tin foil & plastic wrap & place in the freezer until ready to serve.

Serve with whipped cream or ice cream!
