This salad is green, crunchy and super satisfying- for those days when you just need something quick and healthy. (Would be delicious topped with steak or salmon too!)
(For one meal-sized serving of salad)
2 cup of romaine lettuces; finely chopped
2 can chickpeas; drained
1 cup of fennel; chopped
Salt & pepper
1 tbsp of garlic salt
2 tbsp olive oil
2 tbsp tahini
Preheat your oven to 375F.
In a bowl, mix together the drain chickpeas with the garlic salt and 1 tbsp of olive oil.
Pour the seasoned chickpeas onto a tin foil- lined baking tray.
Bake for about 20 minutes or until completely crispy.
In your salad bowl, lay down the romaine, then the fennel & crispy chickpeas
Salt & pepper the salad.
Finally, drizzle with the rest of the olive oil & tahini.
Toss & enjoy!
