1lb of beef (cut of your choosing), cut into chunks
1 large head of broccoli, cut into florettes
1 packet of soba noodles
2 large portobello mushrooms, sliced
3 cloves of garlic, minced
1 tbsp cornstarch
1/4 cup of soy sauce
1 tbsp hoisin sauce
1 tbsp brown sugar
1 tsp of sesame seeds for garnish (optional)
2 scallions; sliced
Cook the soba noodles according the package.
Drain in cold water & set aside.
In a small bowl, mix together the soy sauce, hoisin sauce, garlic & brown sugar.
(Save the corn starch for later)
In a large pan or wok, fill the bottom with about an inch of water & boil.
Once boiling, add the broccoli.
Cook until almost soft, then drain & set aside.
In the same pan/ wok add the beef & cook until brown on each side.
Once cooked, add the sauce & mix well.
In a small bowl, mix together the corn starch & about a teaspoon of water until a slurry is created.
Slowly pour the corn starch slurry into the pan, stirring well.
(This is to thicken the sauce).
Add the mushroom slices & broccoli back into the pan.
Mix well & let the mushrooms soften.
At the last minute, add the soba noodles back into the stir fry and mix well.
Serve in a bowl with sesame seeds and scallions (Sriracha optional).
