1 box of large macaroni pasta
2 medium-sized zucchinis; diced
2 large handfuls of curly kale (or any dark leafy green)
3 tbsp pesto sauce (premade or homemade)
1/2 cup mozzarella balls or chunks
2 tsp olive oil
1/2 tsp garlic powder
1/2 tsp of chili flakes
Parmesan cheese for topping
In a large pot, bring some water to a rolling boil.
Cook the pasta as instructed on the box.
Drain, toss with olive oil (about 1 tsp), and set aside.
In a large pan, heat 1 tsp of olive oil.
Add the zucchini & kale to the pan & add the chili flakes & garlic powder.
Cook veggies until the zucchini pieces have softened & kale has wilted completely.
Once the veggies have cooked down, toss the pasta with the pesto sauce.
Add the veggies & mozzarella chunks & mix well.
Top with parmesan cheese & serve!
