Peach + Corn Salsa

Ingredients:

  • 1 peach; chopped into small cubes

  • 1 corn on the cob; cooked on the BBQ (you can also used frozen charred corn, about 1 ½ cups)

  • 1 jalapeno; deseeded and finely diced

  • 1 Anaheim pepper; deseeded and finely diced

  • ¼ of a red onion; chopped into small cubes

  • ¼ cup cilantro; chopped

  • Juice of 1 lime

  • ¼ tsp kosher salt

Combine all of the ingredients in a bowl and stir until well mixed. Taste and adjust the seasoning as needed. Serve with grilled chicken, fish, or steak, or enjoy it as a dip with your favorite chips.

If you're making this for a crowd or want leftovers, I recommend quadrupling the recipe. As written, it serves about 4 people or makes enough for one meal.
