Cheesy Zucchini + Turkey Skillet
Ingredients:
1 tsp olive oil
1 lb ground turkey
1 tsp Dan-o’s Original Recipe
1 yellow onion; diced
3 cloves of confit garlic
2 zucchinis; chopped in cubes
1 24 oz. jar of your favorite pasta sauce
A few dollops of ricotta cheese
Some low-moisture shredded mozzarella
Grated parmesan cheese
Preheat the oven to 375°F.
Heat the olive oil in a large cast-iron skillet or oven-safe pan over medium heat. Add the ground turkey, breaking it apart with a wooden spoon or spatula as it cooks. Once the turkey is about 80% cooked through, stir in the Dan-O's seasoning and onion. Cook until the onion is softened and translucent.
Add the confit garlic, stirring until the cloves melt into the mixture. Mix in the zucchini, then pour in the pasta sauce and stir until everything is evenly coated and the zucchini is well distributed. Let the mixture cook for 5–7 minutes, just until the zucchini begins to soften.
Remove the skillet from the heat and dollop the ricotta over the top. Sprinkle with shredded mozzarella, followed by a generous dusting of Parmesan cheese.
Transfer the skillet to the oven and bake for about 20 minutes, or until the cheese is melted, bubbly, and lightly golden.
Serve warm with crusty bread, garlic bread, or a simple side salad.
